Cauliflower Couscous
This is very easy to make! I used left over steamed cauliflower to create this dish.
Steam your cauliflower first. Mince the cauliflower heads so that they are small - couscous sized. Chop up the green pepper, onion, and garlic clove.
Heat a frying pan, and lightly cover the pan with olive oil. When the pan is hot, add the pepper, onion, and garlic - let cook for 5 minutes. During that time, add the paprika, ground pepper, and crushed red pepper to the pan (to your liking of the amount of flavor and spice you want in the dish.)
After the vegetables are cooked, add the “couscous” cauliflower into the pan. Add the parsley, basil, and oregano to the pan, and allow to cook until the cauliflower turns golden brown. This only takes about 5 minutes.
