Lettuce Wraps
This recipe is great and easy to make. I got the idea off of pinterest from a Mediterranean chicken lettuce wrap. My boyfriend is a vegetarian and we decided to use our own ingredients. This meal is delicious, filling, and fun to eat. You can put what every you'd like in it, but this is what we did.
Ingredients

Baby Romain Lettuce (You can use bigger pieces of lettuce if you'd like)
Quinoa
Yellow Squash
1/2 Sweet Onion
3 Plum Tomatoes
1 Green Bell Pepper
1 Can of Red Kidney Beans
Mixed Pitted Olives
Ground Pepper
Cajun Seasoning
Dried Basil
Dried Oregano
Garlic Powder
Peach Mango Salsa
Quinoa
Yellow Squash

1 Can of Red Kidney Beans

Cook the Quinoa until it is done. Chop up the squash, onion, tomatoes, and bell peppers. I sauteed these vegetables for about 15 minutes. While they are cooking I added the seasonings; ground pepper, Cajun seasoning, dried basil, dried oregano, and garlic powder. Heat up the red kidney beans, slice the olives, and peal the lettuce leaves off the lettuce hedge. When everything is done cooking you are ready to go and put everything together.
