Turkey and squash

Ingredients

Ground Turkey
1 Green Zucchini Squash
1 Yellow Squash
1/3 Yellow Onion
1 Medium Tomato

Corn Tortillas

Vegetable oil
Taco Seasoning
Ground Pepper
Garlic Powder
Onion Powder
Ground Cumin
Crushed Red Peppers
Dried Basil
Dried Parsley
Dried Oregano


Chop up the Green & Yellow squash, the onion and the tomato.  In one pain begin cooking the ground turkey, this will take about 10-15 minutes over the stove, you want to continuously stir in order to separate the turkey pieces.  Add half of the taco seasoning bag onto the turkey, and a pinch of ground pepper, garlic & onion powder, and cumin. Stir the turkey.

In a separate pan, coat with vegetable oil, and add the chopped up vegetables, cover and let cook for 2 minutes.  Add seasonings (ground pepper, garlic powder, onion, crushed red pepper, dried basil, dried parsley, and dried oregano). turn the veggies over to cook other side, cover and let sit for about 5-10 minutes.

Rice and Garbanzo bean Taco

This recipe was actually created because we had rice left over from the night before.  If you have leftover food that you want to use up, but want something different from what you had the day before, try using it in a new recipe.  The rice was a yellow rice with okra, and tomatoes cooked into it.  This was actually a really good breakfast taco.

1 Can of Garbanzo Beans/Chickpeas
Yellow rice - Spanish rice
1/4 Red Onion
Cherry Tomatoes
Salsa
Blue Tortilla taco shells

Cook the rice however you wish, throw in tomatoes or onions, however you enjoy it.  Heat up the Garbanzo Beans.  Chop the onion, and cut the cherry tomatoes in half. Now you can put your taco together.  Add the rice onto the shell, a Tbs of salsa, the onion tomatoes and garbanzo beans.   mmmmmm
