VEGETABLE medley soup 

This soup is my boyfriend's, Stewart Webster, creation. And might I say, it is absolutely delicious.  It was so flavorful, with all the different vegetables and spices. It was extremely filling, and a great meal that we both enjoyed.  It's perfect for a cold winters night.

Ingredients

3 Cups of Vegetable Stock
4 Chopped Potatoes
2 Chopped Green Bell Peppers
1 Chopped Spanish Onion
1/2 Cup of Baby Carrots
3 Sliced Celery
1/4 Cup Green Beans
1 Handful of Fresh Parsley
1 Can of Red Beans
1 Sliced Yellow Squash
A Pinch Garlic Powder
A Pinch Onion powder
A Pinch Cajun seasoning
A Pinch Ground Black Pepper
A Pinch Dried Oregano
A Pinch Dried Basil 


Boil the vegetable stock.  Lower heat and add the potatoes, carrots, and celery for about 15 minutes. Then throw in all the other ingredients and cook for about 25 more minutes. The soup should take a total of about 40 minutes. Then the soup will be ready to enjoy!
