Couscous and SAUTÉED Vegetables

1 Beefsteak Tomato
1/2 Sweet Onion
1 Yellow or Green Bell Pepper

Powder Garlic
Paprika
Ground Pepper
Dry Oregano
Dry Parsely
Dry Basil
Powder Cumin
Optional
Feta Cheese
Spinach

Chop up the vegetables - the bell pepper, onion, and tomato.  Sauté in a pan for about 5-8 minutes or until the vegetables are cooked to your liking.  While they are cooking, add the seasonings - garlic, paprika, ground pepper, oregano, parsley, basil and cumin.  When the vegetables are finished cooking, take off the heat and cover.

Cook the couscous.  Follow the directions - boil the water first, and then add the serving size of couscous to the boiling pot- stir, cover, and take of the heat for about 5 minutes, or until the water has been absorbed.

Mixed the couscous and vegetables into a big bowl together.  You can add some feta cheese to the bowl, and when serving the couscous you can also add a bed of spinach to your plate and top it with the couscous and vegetables.
