Israeli Couscous Chopped Salad

This is a great dish to pack on the go to take to work.  And it is quick and easy to prepare. 

Ingredients

Israeli Couscous
3 Romain Leaves
3 Roasted Peppers
3 Pepperoncini
1/4 Red Onion
Green Olives

Balsamic Vinaigrette
Olive Oil


Cook the couscous, it should only take about 3-5 minutes to cook - follow the instructions on the box.  Chop the Romain lettuce leaves, peppers, pepperoncini, and onion up - add to a bowl.  Add a few olives to the salad. When the Couscous is finished mix in the bowl with the vegetables.  

For the dressing, mixed together some balsamic vinaigrette with 1/4 teaspoon of olive oil, and mix with the rest of the salad.
