POTATO Pancakes

Potato Pancakes, also known as Potato Latkes are delicious.  My family eats this meal during Hanukkah, but I like to whip it up every now and then. 

Ingredients

Picture
2 Eggs
3 Russet Potatoes 
Chopped Parsley
1/2 Onion

Garlic Powder
Ground Peppers
Dried Basil Leaves
Salt

Wash and Peel the entire Potato. Chop the Onion and parsley.  Whisk 2 eggs, and combine everything into a bowl.  Add the garlic powder, ground pepper, dried basil leaves, and salt to the bowl. 

Heat the pan, add vegetable oil, and scoop mixture into the pan.  Cook until potatoes are done, or until they are golden brown.  This recipe makes about 16 latkes. 

This dish is great when served with some homemade applesauce.
