Savory Vegetable Soup
Each vegetable and seasoning brings its own flavor to this meal, which leaves a savory taste on your tongue. This soup is both delicious and filling. You don’t have to be a vegetarian to love a meatless meal.

3 Cups of Vegetable Stock
1 Can of Fire Roasted Diced Tomatoes
4 Stocks of Carrots
4 Stocks of Celery
2 Sweet Potatoes
2 Cups of Baby Spinach
1 1/2 Cans of Black Beans
1 Medium Onion
1 Garlic Clove
2 Bay Leaves
Chili Powder
Ground Pepper
Dried Basil Leaves
Dried Oregano
1 Pinch of Salt

Bring the vegetable stock to a boil. Add the celery and carrots - cover and cook for 10 minutes. Add the Sweet Potatoes - cover and cook for 20 minutes. Add the can of tomatoes - bring to a boil and cook for about 10 minutes. Add the onions, garlic, bay leaves, and seasonings (ground pepper, chili powder, basil, oregano, and salt.) - cover and cook for 20 minutes. Add the beans and spinach and cook for about 5 minutes.
